Here's the recipe:
Makes 12 mini doughnuts
• 1+1/3 c plain flour
• 1/3 T baking powder
• 1/2t salt
• A pinch of cinnamon + a pinch of nutmeg
• 1 T (about 20g) unsalted butter, melted
• 1/3c castor sugar
• 1 large egg
• 1/4 c milk
• 1 t vanilla
1. Sift the flour, baking powder, nutmeg, and salt in a bowl. In another bowl, whisk the eggs and sugar till about dissolved. Add the vanilla, melted butter, and milk.
2. Add the wet ingredients into the dry. Mix till dough comes together but do not overmix. Dough will be soft and sticky. Chill the dough for 20 to 30 minutes, till dough is manageable.
3. Roll out on a floured board. To make rolling easier, flour rolling pin and cutter too. Roll the dough to 3/4 to 1 inch thick and cut rings using a doughnut cutter. You can chill them again for about 15mins prior to frying.
4. Heat up oil but make sure oil is not too hot! Fry four or five doughnuts at a time for about 1-2 minutes on each side or until golden borwn. Remove and drain excess oil on paper towels.
5. Dust with generous sprinkling of sugar.

I just bought 1kg of yam from the market ( I am from sydney) they are hard to find.
Searched long time for a yam cake recipe. Yours looks excellent. Do nyou have the recipe. Also trying to find a purple yam icecream recipe - its hard to locate ...do you have any suggestions?
